I usually hate Halloween. It’s right after the seasons start to change, and most years I’m exhausted and miserable with a nasty cold. The last thing I feel like doing this time of year is make a costume and go out. But when you have a husband who loves Halloween and a preschooler who is so completely into it, it’s hard not to get into the spirit.
On Saturday, we attended the East Bay Vegan Bakesale, which was raising money for Mickaboo. And on Sunday we attended the Solano Playlot’s Halloween Festival, which also had a bakesale. We had a lot of baking to do and not much time, so muffins to the rescue! We used the Best Pumpkin Muffin recipe from Vegan With a Vengeance, but we substituted the pumpkin with canned sweet potato and canned butternut squash. We also swapped the molasses with maple agave syrup (found at Trader Joe’s). They were a tad sweeter than the original recipe, and that little touch of maple was divine. And the best part is that when you tell Corinne she gets to bake it’s as if you told her we’re inviting unicorns over for lunch. We’ll definitely be making these again.
