I’m a little bit obsessed with feeding Corinne healthy meals, but I usually don’t have oodles of time to cook something. The quickest method I have found is to use the finest side of a box grater to grate up a carrot, zucchini, apple or whatever is on hand. Once you have a nice pile of grated veggies on your cutting board, give it an additional chop with a large knife, and then add the veggies to a pan with some water. It takes almost no time at all to simmer this. Add a few spoonfuls of the veggie mixture into a small bowl, mix in some multigrain baby cereal, a tiny bit of olive oil, and a tiny bit of flax meal. I will often add some beans or serve this with some small cubes of tofu.
The combinations are endless, but one favorite is grated carrots and apples. Simmer with raisins and a touch of cinnamon. Mix this with some fortified oatmeal and you have a veggie dish that tastes like dessert. For kids who don’t like veggies, I would start a little less carrot and then gradually sneak in more.
I’m probably a weirdo for thinking a box grater would be the perfect baby shower gift, but I honesty don’t know what I would do without mine.
