Soup Season

Yes, that little chill in the air means it’s time to relight the pilot, plan that trip to the pumpkin patch, and put all the fuzzy socks at the top of the sock drawer. It also means that soup season has begun.

A few favorites I highly recommend:

Lucien’s Soup from Lulu’s ProvencÌœal Table:  This book is definitely not vegan, but this simple recipe is. It also happens to be extremely kind to your waistline and super delicious. Turnips and leeks have never been more amazing.

Broccoli-Potato Soup with Fresh Herbs from Veganomicon:  Make friends with someone who has an herb garden and get cooking! The broccoli-potato combo is divine, and the fresh herbs make it divine+a million.

Red Lentil Soup with Lime from Vegetarian Cooking for Everyone:  Deborah Madison’s book is overflowing with amazing recipes, and this is the one I make most often because it has so much flavor and takes the simple red lentil on a wild adventure.  Leave out the yogurt and replace the butter with olive or coconut oil, and if you’re like me you will probably want to have some extra limes on hand. Any limes you don’t use for the soup can go into your margarita, so what are you waiting for?

Rosemary White Bean Soup from The Barefoot Contessa Cookbook: This is the perfect rainy day soup and so easy to veganize by replacing the chicken stock with vegetable broth. You can also get away with adding less oil. Serve this with some rustic bread and a light salad.
