Back to Basics Breakfast

The weather here has been miserable, and nothing makes that more bearable than some cozy and warm comfort food. One of my favorites is Irish oatmeal (steel cut oats).

I never, ever start this stuff in the morning because frankly I don’t have the time or patience to cook the oats for 30 minutes. An easy shortcut is to start the night before: boil up some water, turn off the heat, and add the oats (4 parts water to one part oats, with about 1/4 cup oats per serving). Cover it and leave it overnight. In the morning, just add apples (diced small or grated), raisins, and cinnamon and cook for 5-10 minutes. Serve in a bowl with some brown sugar, a splash of your favorite nondairy milk, and maybe a tiny bit of soy creamer. I swear I feel like I’m having pudding for breakfast.

For an extra treat, try this with some Vietnamese cinnamon.
